Dark chocolate fondue

All the freshness of seasonal fruit and the deliciously intense flavour of dark chocolate

Method

Bring the milk, cream and honey to the boil, add any flavourings or spices (picture 1) and leave to infuse for 5 minutes. Heat back up to 60° and pour slowly through a small sieve (picture 2) onto the finely chopped dark chocolate.

Mix delicately into a smooth cream with a velvety texture (picture 3). Store in the fridge.

Immediately before use, heat the cream in the microwave or in a bain marie, then dip in your favourite fruit (picture 4).

Tips


  • Chocolate-covered fruit

    Place the fruit on a toothpick and chill it in the fridge for a few minutes; this will prevent the chocolate from dripping down the stick once the fruit has been dipped into it, and the chocolate covering will turn dry and crisp right away.

  • Spicy fondue

    Fondue can be spiced or flavoured with anise - chilli pepper, mixed spice, nutmeg, etc.
