Rice and fruit soup

Sophisticated dessert that combines the fresh flavour of cubed fruit with cocoa-flavoured rice in a chocolate cream

Composition

  • Boiled Venere rice
  • Cold chocolate
  • Cubed fruit in syrup
  • Dark chocolate drops
  • Vanilla ice cream

Method for boiled rice

  • 1l water
  • 150g Venere rice
  • 50g bitter cocoa

 

Bring the water to the boil, add the bitter cocoa and mix. Add the Venere rice and boil. Drain the rice and leave it to cool (picture 1).

Method for cold chocolate

  • 500g milk
  • 40g bitter cocoa
  • 100g sugar

 

Boil the milk with the cocoa and sugar (picture 2). Leave to cool. Pour the milk into another container, taking care not to pour in the substance that has sunk to the bottom.
Cut the fruit in syrup (peaches, apricots, pineapple, pears, etc.) into little cubes and dry well using kitchen paper. Add the boiled rice and the chocolate drops (picture 3). 

Place the mix in the bowls (picture 4) and top with the cold chocolate (picture 5).
Decorate with mint leaves.

Tips


  • Rice and fruit soup

    Cool the rice well and make sure the grains do not stick. Make sure you dry the cubed fruit well.
